Brown Sugar Blueberry Cake
The blueberries have been wonderful this season so I decided to whip up a quick recipe for making individual cakes. The best part is you don’t have to have any special tools are ingredients and it cooks in the microwave so you don’t have to worry about heating up your entire kitchen.
4 T all-purpose flour
2 T brown sugar (lightly packed)
¼ t baking powder
1 t butter (melted)
1 T vegetable oil
1 T water (you may need a little more)
2 T blueberries (about 8-10)
When I make these little individual cakes I usually mix everything up in a 2 cup Pyrex measuring cup and cook it right in that, cuts done on the dishes that way. But if I want it to be a little more presentable I will use a mock ramekin. After some trial and error I have discovered that the Pyrex 1 cup container works perfectly, just make sure that you spray it with cooking spray first.
You don’t have to worry about what order you mix the ingredients together. I usually just grab whatever is on hand first and go from there. The only thing you don’t want to put in until the very end is the blueberries which should be gently folded in. Once everything is thoroughly combined cook in the microwave for 60 seconds. Before careful taking it out the sides will be hot.
